Rooibos (pronounced “Roy-bus”) grows only in the Cedarberg mountain region of South Africa. The soft, new green growth is harvested by hand once a year, then bruised between rollers to trigger the oxidation process, not unlike black tea production. Spread on an open court and covered with sheets, the leaves then go through the “sweat,” developing their deep red color and characteristic flavor. We have gone to some lengths to find not only the most flavorful rooibos on the market, but one that is organically grown as well. With its saffron and vanilla aromas, full body and faint maltiness, it’s a surprisingly versatile cup: take it hot, iced, sweetened or plain.
Start with a preheated cup or teapot.
Measure 1 spoonful (2.8g) of tea for each cup of water.
Bring the water to a rolling boil; steep tea for 5 minutes.
Strain leaves while pouring.
