Named for the indigenous Batak ethnic farmers, this super-select coffee grows in the Lake Toba region of North Sumatra. Unroasted, it takes on a deep blue hue that is a result of a unique form of processing developed in Indonesia called "wet-hulling". This enables faster drying – critical, since it rains torrentially in Sumatra. It also helps develop a profound, syrupy body that we just love in this cup.

Knowing your source is challenging in a place where small household farmers often sell to anonymous supply chains. But our supplier works hand in glove with the local farmers and collectors to achieve a super select quality. Blue Batak is collected on the spot and graded repeatedly to leave only this intensely sweet and heavy cup.
