Tea Story

Darjeeling is known not only for its quality, but for its variety. During the 19th century, imported China tea was planted along with indigenous bushes from low-lying Assam. As a result, many hybrids now populate the gardens. The elevation of a single estate may sweep from 2,000 feet up to 6,000 feet, with the temperature and cloud cover varying widely. High-grown teas are the most revered, as the cool weather slows the growth of the leaves and concentrates the flavor. Add to this the three distinct plucking seasons – first flush, second flush and autumnals – and the range of quality from even a single estate can vary enormously. Darjeeling Fancy is a leaf grade second flush tea with a noticeably puckery quality and a rich, flowery bouquet.

Brewing Tips

Start with a preheated cup or teapot.
Measure 1 spoonful (3g) of tea for each cup of water.
Bring the water to a rolling boil; steep tea for 4 minutes.
Strain leaves while pouring.
