Had my first sip and decided to came back for another 1.5 pounds of beans and will get more while it's still available.
This bean has the unique floral and bright fruited flavor as Ethiopian bean usually has. The light roast keeps the citrus and floral in the perfect balance. I brew it with my Hario V60 and the acidity is just about right.

I'm relatively new to light roasts, so it's hard to judge how Etoile stands up to others. On its own, I found it lived up to its description. A heavy yet pleasant citrus flavor that offered brief, light acidity. On the first day of receiving the roast, after having it shipped via 1-day shipping, it was brewed using the pour-over method. The resulting cup was so sweet, that it would have been easy to think a pinch of sugar was added. While the brews have mellowed out now a couple weeks in, this is still a great roast I wouldn't mind picking up again during the next holiday season.

Perhaps I am not brewing this coffee correctly. Previously, I have brewed lightly roasted Yirgachefe beans from La Prima Tazza in Lawrence, Kansas, which was wonderful. The Etoile beans leave a lot of light colored chaff after brief grinding. Using a French press, there is considerable light colored bubbly, froth upon first pouring in the boiled water. The color of the patina after brewing is too light, not the rich tawny, ochre that is typical of most coffees. The aroma of this brew is sour and it tends to leave a sourness in the back of the throat that does not endear one to further consumption. I have tried increasing the amount of beans used and brewing time, which helps, but still does not ameliorate the sourness. This citrus like sourness does not approach the pleasing rich, bitterness expected in fresh ground coffee beans.
