Savor the Perfect Steep

These simple steps can make the difference between a good cup of tea and a great one.

Black Tea

  • Start with a preheated cup or teapot.
  • Measure 1 spoonful (3 grams) of black tea for each cup of freshly drawn, filtered water. For large leaf teas, use more volume; for smaller leaves, use less.
  • Bring the water to a rolling boil; steep tea covered for 3 to 5 minutes, depending on the strength desired. Larger leaves infuse more slowly. A longer steep gives more body and pungency.
  • Strain the leaves while pouring.

Oolong Tea

  • Start with a preheated mug or teapot.
  • Measure 1 to 2 spoonfuls (3 grams) for each cup of freshly drawn, filtered water. For balled leaves use less volume; for longer leaves, use more.
  • Bring the water to a rolling boil for darker, more oxidized leaves. For lighter, greener leaves, wait 30 seconds before pouring (200°F). Steep tea covered for 4 to 5 minutes.
  • Strain the leaves while pouring.

Green and White Tea

  • Start with a preheated mug or teapot.
  • Measure one spoonful (3 grams) for each cup of freshly drawn, filtered water. For white teas and more voluminous green teas, use a bit more; for dense leaves use half as much.
  • Bring the water to a boil. For white teas, gunpowder, and Jasmine teas, let water cool for one minute before steeping (195°F). For green teas, let water cool for two minutes (180°F). Steep covered for 3 to 5 minutes depending on taste.
  • Strain the leaves while pouring.

Herbal Tea

  • Start with a preheated mug or teapot.
  • Use one spoonful (2–3 grams) for each cup of freshly drawn, filtered water. For more voluminous herbals, use a bit more.
  • Bring the water to a rolling boil; steep covered for 4 to 5 minutes.
  • Strain while pouring.
