Masala Chai: A Kaleidoscope of Flavor
Warming, Aromatic, and Exciting
India is a land of spices that infuse every dish with a kaleidoscope of flavors and form the soul of the nation’s most iconic beverage, masala chai. On any given street corner you’ll find chai wallah, local vendors serving the hot, fragrant tea, theatrically pouring it from a height to give it a frothy texture. It’s simultaneously one of the most soothing and invigorating things to drink.
Quite simply, masala means a mixture of spices, and chai is the word for tea, so our Mighty Leaf Masala Chai is black teas blended with spices. Inspired by a visit to Kolkata, we start with teas that take well to heated milk—full-bodied Assam and Nilgiri. On the masala side, we use a blend popular to that region, with ginger and cinnamon leading the way, and cloves, cardamom, and a hint of black pepper following on. This aromatic combination of spices coalesces into something harmonious that is more than the sum of its parts.
This drink is ideal in autumn. It’s aromatic and warming, and a touch of honey really brings the spices into focus. The addition of warm milk makes it altogether another creation, simultaneously decadent and wholesome. Don’t forget to take in a good whiff before sipping for the full sensory experience.
Here’s an easy recipe that brings out the best from our Masala Chai.
Masala Chai Latte
Serves two
Ingredients
1 cup freshly drawn water
3-4 tablespoons of loose or (3-4 tea bags) Mighty Leaf Masala Chai
1-2 teaspoons star anise and/or fennel seed (optional)
1 cup whole milk or alt-milk
2-3 teaspoons sugar, brown sugar, honey, or sweetener of your choice
Directions
1. Bring the water to a low boil.
2. Add the Masala Chai, star anise, and fennel seed (if using); and cover and remove from heat.
3. Let the chai steep for at least 10 minutes. If you enjoy a stronger chai you may continue infusing for up to 2 hours. This allows a full infusion, producing more intense flavors.
4. Add milk and sweetener and stir to dissolve.
5. Pour through a strainer into warmed mugs or heat-proof glasses. Enjoy!
